Bradley 4 Rack Digital Food Smoker

The Bradley Smoker is a unique smoke house, sold complete with its accompanying smoke generator, in which flavour bisquettes are burned for 20 minutes each so that the temperature does not fluctuate. This eliminates high temperature gases, acids and resins that can distort the flavour of smoked food.

Bradley Smokers makes clean tasting food without any aftertaste. While other smokers need to be tended constantly, the Bradley Smoker automatically produces clean, cool smoke for up to 9 hours safely and without intervention.

As with the Original model, Bradley Digital Smokers are capable of both hot and cold smoking:in fact they do a remarkably fine job of cold smoking due to the sustained and controllable way in which the smoke is generated. For cold smoking use of the Cold Smoke Adaptor is recommended.

The bisquette consumables are burned on top of an electric element. For hot smoking, the heat for cooking is generated by the independentally controlled electrical element. This is a separate element from the bisquette burner. On the digital models, control of the cabinet temperature, is via the programmable panel on the front of the Smoke Generator.

The programmable digital dispay, provides for fine control over the smoking process with control over three separate parameters:

  • The oven temperature: set the target oven temperature and the smoker will attempt to maintain this temperature while also displaying the actual temperature in the oven.
  • The oven time: set the time you would like the oven to operate (the cooking time). After this time has elapsed the cooking heater element will switch off.
  • The smoking time: set the time that you would like the smoker to continue generating smoke. This can be set independently of the cooking time.

This Bradley smoker is equipped with four racks as standard with a capacity of 76 litres. If you require a greater capacity, then digital smoker Model BTDS108CE has six racks, and a capacity of 108 litres. The front exterior of the digital models has a painted brushed stainless steel look. The internal surfaces are in stainless steel. As with the Original Bradley Smoker the cabinet is insulated. Bradley extra racks and jerky racks will fit these models. Other accessories are also available.

Perfect for entertaining, creating gourmet foods in your own home, or just enjoying the flavour that smoking brings. The simplicity and ease of use of Bradley Digital Smokers make them a great choice for all types of user. However if you are not a fan of digital controls, then the Original Bradley Smoker is a worthy alternative.
While Bradley Smokers are intended for domestic use, they are also widely used in light commercial environments.

Bradley bisquettes The key to the success of Bradley Smokers is Bradley Flavour Bisquettes. To produce the bisquettes, the hardwood chippings are bound together using precise quantities, at controlled pressures and densities. The flavour of the smoke is determined by the variety of wood being burned.

  • Alder and maple give a rich and distinct flavour commonly used with seafood hams and bacon.
  • The stronger and very distinct flavours of mesquite and hickory are commonly used for smoking beef and pork products such as pork shoulders and beef brisket.
  • Apple and cherry impart a sweeter, milder smoke flavour, commonly used with poultry and wild game meat.

Bradley bisquettes Bradley Smokers burns a flavour bisquette once every 20 minutes, producing a clean smoke flavour. As each is burnt, it is gently pushed from the burner element by the next bisquette, to be extinguished in the pot of water. The cycle continues for as long as the smoker is loaded with bisquettes.

When wood burns, the smoke flavour is produced in the initial minutes of the burn. Once the wood generates enough heat to keep burning on its own, it yields high temperatures, acids, resins and gases. These will distort the flavour and the appearance of smoked food. When wood burns to this stage there is no control over the cooking conditions. With Bradley Flavour Bisquettes the guesswork is eliminated.

Not only do Bradley Flavour Bisquettes eliminate unwanted heat, smoke produced the Bradley way is four times cleaner than smoke produced by identical loose chips burned in a fry-pan or burn-box.

The Bradley Smoker consumes bisquettes at the rate of approximately one every 20 minutes. Operating costs of the smoker are therefore less than a pound (£ GBP = 1.2 euro) per hour.
